FAQ
Why don't you sell ground coffee?
Ground coffee oxidizes much faster due to its increased surface area. We only sell whole beans because we are convinced of the quality of every single coffee bean and don't want to hide it.
Ultimately, without a good grinder, there's no good espresso.
The coffee packaging shows the roasting date and the best before date. What does that mean?
The fresher the coffee, the better? Nope, that's not true for coffee!
During roasting, coffee develops CO2, which slowly escapes after roasting. The coffee needs to "degas," which is why there's a valve in the package. If the package didn't have a valve, it would explode in the worst-case scenario.
But more importantly: The CO2 significantly influences the taste of the coffee. Immediately after roasting, the coffee tastes flat and sour with a bitter aftertaste, and when extracting an espresso, there are small bubbles. Once the coffee has "degassed," there's only a little CO2 left, and the coffee is ready to drink. The taste and sweetness are now much more pronounced.
All our blends are ready to drink one week after roasting. In our experience, Canephoras need a bit longer (min. 2 weeks).
However, the coffee might arrive fresher. So pay attention to the roasting date.
The printed "best before date" is the date we are required to print according to Swiss food law (one year after the roasting date).
How long does coffee "keep"? Within what timeframe should the coffee be consumed?
Once the coffee has degassed, it reacts with oxygen and begins to oxidize. This harms the coffee's aromas, and the coffee oils begin to oxidize and can become rancid. The coffee ages and loses its aroma. In sealed packaging, the coffee oxidizes more slowly, but unfortunately, this process cannot be stopped. We recommend buying small quantities of coffee, drinking it as quickly as possible, and storing it correctly.
What's the best way to store coffee?
The best way to store coffee is in its original packaging. It comes with a zipper and a valve. Store the sealed package in a dark, dry, and cool place (not in the refrigerator). Keep it away from foreign odors and store it for as short a time as possible.
Espresso Preparation with a Portafilter Machine
How do I make coffee with your espressos?
All our espressos are roasted for portafilter machines. However, they also work wonderfully in a French press and Bialetti Moka pot.
A good grinder is very important for coffee preparation!
Which grind size should I use for preparing espresso with a portafilter machine?
The grind size for espresso preparation varies greatly depending on the roast level, humidity, age, and type of beans. A barista has to adjust the grind several times a day to achieve the perfect espresso. Unfortunately, we cannot recommend a perfect setting, as many factors play a significant role here. But in general: you need a grinder that can grind very finely and evenly.
What preparation tips can you give me for your espressos?
All our brewing recommendations were created by our mustache barista Weily on a La Marzocco GS3 with a BWT water filter. But: Every machine and every grinder behaves differently. And every barista does too...
Your coffee machine will most likely have a different pressure profile and was certainly not cleaned by Ueli. And no one presses as hard with the tamper as Mustache Weily.
Nevertheless, we try to give you approximate guidelines for the different roasts. Please use these recommendations as a starting point and slowly adjust to your perfect extraction time and setting according to your taste.
Most importantly, you should enjoy the coffee! After all, it's your taste buds, and taste, as they say, "is a matter of taste."
Our brewing recommendations:
Canephora:
18g in / 2x25ml out (1 : 2.75) two cups / portafilter 2-spout in 21 seconds
Temperature: 88-90 degrees
Special:
Canephora needs to be ground very finely and, in our experience, tastes better when it has degassed for at least 2 weeks and is extracted at lower temperatures.
Arabica:
19g in / 25ml out (1 : 1.3) one cup / bottomless portafilter in 25 seconds
Temperature: 93-95 degrees
Special:
Absolutely prepare in a bottomless portafilter. It gives a nicer crema and a fuller mouthfeel!
Liberica:
18g in / 2x30ml out (1 : 3.33) two cups / portafilter 2-spout in 23 seconds
Temperature: 92-94 degrees

What baskets do you use?
Too bitter! What can I do?
- You're burning your coffee, that's why it tastes bitter. The brewing temperature is too high. Set it lower.
- Do a blank shot! Let the water run from the brew group until no more boiling/sizzling water comes out. Now the water from the brew group should have a lower temperature and no longer burn your coffee.
- Keep the grind amount the same but grind a bit coarser so it runs faster.
Too sour! What can I do?
- The brewing temperature is too low. Set it higher.
- The portafilter is not hot enough yet or the machine has not reached operating temperature.
- Use less coffee grounds and grind finer. The extraction time should not change!
- Still too sour? Grind even finer and extend the extraction time by a few seconds.
- You bought a light, fruity Arabica espresso. It will remain sour because it is a light Arabica.
- Definitely prepare light Arabicas in a bottomless portafilter for a nice crema and a full mouthfeel. In our opinion, Arabicas should only be prepared this way. This makes the acidity very tasty and harmonious.
It may be that you cannot adjust the brewing temperature on your portafilter machine.
Manual Preparation
Bialetti Moka Pot
Which grind size should I use for the Bialetti Moka pot?
For the Bialetti, you should grind coarser (orientation: semolina) and make sure the water doesn't get too hot during preparation. Prepare on a low flame! Don't let it stand/bubble.
Bialetti preparation:
- Fill preheated water from the kettle just below the small valve in the lower part of the Caffettiera.
- Fill the Bialetti filter basket with freshly ground coarse coffee powder. Do not press firmly, just fill loosely and tamp lightly.
- Place the filter basket with the coffee powder into the lower part of the pot.
- Screw it together.
- Place the Bialetti with the lid open on the stove and turn on the hob at low heat.
- Wait until the Bialetti has slowly filled up and you hear a bubbling sound.
- Remove the Bialetti from the stove. Do not let it hiss.
- Pour the coffee into a cup.
There is a design-related problem when preparing with the Bialetti: The water temperature is too hot (over 98 ° C). The high temperature of the water causes a bitter coffee taste because the coffee is burned by the excessively high temperatures. However, this also creates the typical Bialetti taste, loved by many! We recommend not letting the Bialetti get too hot. It simply tastes better. And it remains one of the best coffee preparation solutions in a campervan.
French Press
Which grind size should I use for the French press?
For the French press, you should grind the beans coarsely. Orientation: couscous
French Press Preparation:
- Ratio of approx. 6-7 g per 100 ml, e.g., approx. 35 g for 500 ml or approx. 70g for 1000ml.
- Grind coffee, pour water over it, and stir.
- Let the coffee steep for 4-5 minutes, depending on taste.
- Break the crust with a spoon before pressing down and stir. Remove foam (it contains a lot of bitter substances).
- Press down sloooowly.
- Water temperature: 90-94 °C.
Which coffee is best for a fully automatic machine?
I prefer cappuccino and latte macchiato. Which espresso do you recommend for this?
The darker espressos are perceived more strongly in milk, but a lighter espresso can also taste very delicious. It's best to try a few espressos and fall in love with one (or more).

What does "FULLY FLEXIBLE" mean?
You can postpone or pause your order if, for example, you're going on holiday or have too much coffee at home. Need more coffee? No problem! You can bring the next delivery forward. Of course, you can also adjust the product, quantity, or delivery interval. To make an adjustment, log in to your customeraccount.
What does "CANCELLABLE ANYTIME" mean?
Our subscription has no notice period and no minimum term! You can cancel anytime, even immediately after the first order. Coffee your way. It's your decision. But of course, we are delighted with every order we get to deliver to you. If you want to cancel, log in to your customeraccount.
Too much or too little coffee?
3 days before each new order, we automatically send a reminder email about the upcoming delivery. This gives you enough time to make adjustments to your subscription in your customer account. Too little coffee? You can place the order immediately at any time. To make an adjustment, log in to your customeraccount.
How does payment work for subscriptions?
You can pay for your subscription by credit card. Your credit card will be automatically charged before each shipment.
Are all your SUBSCRIPTION COFFEES available indefinitely?
No. Your subscription coffee may eventually sell out.
